Asparagus and Ham Quiche
You will always save money when you make meals from ingredients that are purchased in season. During the spring season, there are great sales on eggs (think Easter), asparagus, and ham. This quiche recipe combines them all into one delicious meal. It can be served at breakfast, brunch, lunch or dinner. Now, that’s what I call versatile!

Ingredients
- 1 prepared pie crust, 9 inch
- 1/4 tsp. butter
- 1/2 cup onion, diced
- 1 1/2 cup asparagus spears, diced
- 1 cup ham, diced
- 1 tsp. parsley, chopped
- Salt to taste
- 1 1/2 cup Monterey Jack cheese, shredded
- 3 eggs
- 1 cup milk
- 1/4 tsp. salt
- 1/8 tsp. white pepper
Directions
Preheat oven to 375 degrees F.
Steam asparagus until crisp tender (about 5-7 minutes), set aside to cool.
Heat butter in a sauté pan or skillet over medium heat. Add onion and sauté for 3 – 4 minutes. Remove from heat and cool.
Press prepared pie crust into 9 inch pie plate. Prick the surface all over with the tines of a fork.

Prepare custard: Combine eggs, milk, salt and pepper in a bowl, mix thoroughly.

Assemble quiche: Place asparagus, ham and cooled onions in pie shell, spreading evenly.

Top with shredded cheese and sprinkle with chopped parsley.

Pour in custard and gently tap quiche on work surface to remove “air pockets”.

Bake at 375 degrees F for 45 – 50 minutes or until golden brown and cooked through. Test by piercing with a small knife. If knife comes out clean, the quiche is done.
Cool quiche for 15 – 20 minutes before slicing.
